Tortellini in brodo
In central Italy, from Emilia Romagna down to Lazio, (and often in other parts of Italy too) tortellini in brodo is the Christmas dish per eccellenza. It consists of small pasta parcels stuffed with a mixture of pork loin, prosciutto crudo, mortadella, and parmesan cheese, cooked and served in a beef or chicken broth. They are to die for. Many families will still make their own in the days running up to Christmas and next week I will be showing you how to make tortellini in brodo from scratch. Until then, enjoy this picture.
